Thanksgiving Dessert Recipes That Will Make You Go Buy Sweatpants

Hi guys and welcome back to my blog! I’m sorry it’s been such a long time; I’ve been kinda busy lately. No promises, but I might write two blog posts this weekend! Anyway I can’t wait to get into this blog post, which is...Fall Food Recipes! I recently did a fall drinks recipe and I guess you can just call this a part two.

With Thanksgiving just around the corner, (happy thanksgiving break, by the way!) many are hitting the kitchen to prepare the delicious feast. I know I can’t wait for the buttered rolls and mashed potatoes...comment below what your favorite Thanksgiving food is! In addition, lots of people are also busting out the Christmas music (guilty) and decorations! Which is why this will officially be my last fall post for the year before, wait for it, Blogmas! Like Blogtober, you’ve probably heard of Blogmas before (or at least Vlogmas) and I thought it would be really fun to write some festively themed posts for the holiday season.


With that being said, here are some delicious and easy fall recipes to try at home!


*Note- most of these are desserts because why not.


Who else is a little pumpkin obsessed?

Servings: 8

Ingredients:

  • 1 can pumpkin puree

  • 1 can sweetened condensed milk

  • 2 eggs

  • 1 tbsp pumpkin pie spice

  • 1 pie crust

Directions:

  1. Mix everything (but the crust) in a large mixing bowl

  2. Pour filling into crust

  3. Bake at 425 degrees for 15 minutes. Then, reduce the temperature to 350 degrees and bake for an additional 40-45 minutes or until pie is set an inserted knife in the center comes out clean.

  4. Let cool at room temp

  5. Serve with whipped cream!


Like banana bread, but PUMPKIN

Servings: 16

Dry Ingredients:

  • 2 1/4 cups all purpose flour

  • 1 tbsp pumpkin pie spice

  • 2 tsps baking power

  • ½ tsp salt

Wet ingredients:

  • 1 ½ cups white sugar

  • ½ cup melted butter

  • 2 eggs

  • 1 can pumpkin

  • ½ cup chocolate chips


Directions:

  1. Preheat oven to 350 degrees. Spray two 9x5 pans.

  2. Stir dry ingredients in large mixing bowl and set aside

  3. Whisk wet ingredients together in separate bowl

  4. Pour wet ingredients into dry ingredients and fold in chocolate chips

  5. Don’t overmix!

  6. Bake for 40-45 min

  7. Let cool for 10 min


This one is kind of long but looks really good!

Servings: 18

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1 1/2 teaspoons cinnamon

  • 1/2 teaspoon ginger powder

  • 1/4 teaspoon nutmeg

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/3 cup vegetable oil , or canola

  • 3/4 cup white sugar

  • 1/2 cup brown sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 3/4 cup pure pumpkin

  • 1/3 cup milk

Ingredients for cinnamon cream cheese frosting:

  • 2/3 cup unsalted butter , softened

  • 6 oz cream cheese

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 3 - 3.5 cups powdered sugar

  • 1-2 tablespoons cream


Directions:

  1. Preheat oven to 350 and line muffin tins with paper or cooking spray

  2. In a medium bowl whisk together the flour, cinnamon, ginger, nutmeg, baking powder, baking soda and salt

  3. In a large bowl beat together the oil, sugars, eggs & vanilla extract until no lumps remain (about 1-2 minutes)

  4. Mix in pumpkin

  5. With the mixer on low speed mix in the flour mixture about 1/2 at a time alternating with 1/2 of the milk

  6. Spoon the batter into the prepared muffin pan, filling each about 2/3 full

  7. Bake in the center rack of your oven for 16-19 minutes, or until the tops feel slightly firm to the touch and an inserted toothpick comes out clean

Directions for frosting:

  1. In a large bowl beat the butter until fluffy - about 2 minutes. Then beat in the cream cheese

  2. Add in the cinnamon & vanilla extract

  3. Beat in the powdered sugar about 1 cup at a time, starting with the mixer on low speed. If the frosting seems too thick, beat in the whipping cream 1 tablespoon at a time

  4. Frost the cooled cupcakes using a flat knife or piping bag.
